Cheese stuffed Turkey Pesto Tenderloins
Makes: 4 Servings
- 4 Ontario turkey tenderloins
- 1/2 cup (125 mL) basil or sun dried tomato pesto
- 3 oz (100 g) grated Mozzarella cheese
Preheat oven to 375°F (190°C). Cut a slit lengthwise almost all the way through in each of the tenderloin pieces. Spread about 1 tbsp (15mL) pesto inside each opening; add grated cheese, dividing equally between 4 tenderloins. Close opening and hold with toothpicks. Brush tenderloins with remaining pesto.
Place on baking sheet; bake 25-30 minutes or until cooked through and turkey is no longer pink inside. Remove toothpicks and serve.
